Everybody likes lobster. It is arguably one of the finest meats available and many people are willing to pay handsomely for it. It is served in most fine seafood restaurants and is extremely popular.

However, lobster wasn’t always considered a “fine delicacy”. Prior to the late 19th century, it was largely considered food for the impoverished. This all changed once the elite classes of Boston and New York gained a taste for it.
